Hail to Kale Salad
1 package broccoli slaw
(or you can use 3 cups grated carrots + 1/2 head thinly sliced cabbage)
1 bunch of kale – about 10 large leaves, chopped fine
1/3 cup olive oil
1/4 cup balsamic vinegar
1 tsp dried oregano
1/4 c. sunflower seeds
1/4 cup pumpkin seeds
Wash and cut kale into bite sized pieces. Add to bowl with broccoli slaw.
Whisk together olive oil, balsamic vinegar and oregano in separate bowl, pour over kale mixture.
Add sunflower and pumpkin seeds.
Top with chicken to make this salad a meal!
Let chill for 2 hours before serving.
*If you expect leftovers, consider adding the seeds separately to ensure seeds do not go soggy in the salad*
