Keto Pork Schnitzel

We’ve been busy getting into the back to school routine and have had a lot of basic dinners, but I guess that’s over because tonight’s supper was ah-mazing!!
Ingredients
- olive oil
- butter
- 1 medium Pork Tenderloin
- 1 bag Pork Rinds
- 1/2 tsp seasoning salt
- 1/2 tsp black pepper
- 1 tsp ground thyme
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp paprika
- 1 egg
- 1 TB Heavy Cream
- 3 zucchini, spiralized
- 1 cup passata
- 1.5 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- ground Parmesan
Instructions
- Preheat oven to 350
- Cut pork into segments of about 1/4 inch (I use a cast iron pan to flatten them)
- Blend together the Pork Rinds, seasoning salt, pepper, thyme, garlic powder and onion powder into a fine powder. Put the ground mixture into a pie pan.
- Whisk together the egg and heavy whipping cream in a pie pan.
- Heat the Oil and Butter (About 1 TB each) until butter melts and begins to bubble at medium-high temp.
- Dip pieces of flattened pork in egg wash, and then cover in pork rind mixture and place in pan.
- Sear pieces for about 2-3 minutes, and flip over. Once all pieces are flipped, place pan in oven for 5 minutes.
- Melt mixture of butter and oil (about 1/2 TB each) in a pan. Add spiralized zucchini. Stir this around - it takes about 3 minutes to cook. Don't salt or do anything. This will leave with a bit of crunch.
- While cooking the zucchini, microwave the pasata to warm it with the dry seasoning (italian season, salt, pepper, and parmesan) for about 3 minutes at 70% power.
- To plate, place the cooked zucchini in the centre of the plate, cover with 1/3 Cup of Pasata, sprinkle with Parmesan, and add some pork pieces to the top.
