Cauliflower Fried Rice
Cutting down on carbs and miss your rice? Cauliflower makes a wonderful substitute and my 5 year old (who hates cauliflower) ate it all and asked for it again the next day!!
You’ll need:
1/2 head of cauliflower
1/4 tsp olive oil
1 medium shallot
3 cloves garlic
1 cup pre-cooked veggies (optional)
1/3 cup low sodium chicken broth
1/2 Tbsp Tamari / Soy Sauce / Liquid Aminos
1 – 2 eggs (optional)
Cut cauliflower in half (you can use the full head of cauliflower, but it makes A LOT!!) and chop into small chunks. Place 1/2 head of cauliflower in food processor & pulse until it’s a rice and consistency (about 2 minutes).
Heat a frying pan on medium and add olive oil. Dice shallot and garlic and add to heated frying pan. Let shallots and garlic cook for 2- 3 minutes and add cauliflower (and veggies if using). Stir into olive oil mixture and pour chicken broth over top.
Add a few shakes of the Liquid aminos to add some colour to your “rice”.
Cover and cook for 6 minutes or until rice is tender, make a hole in the middle of the frying pan and pour in a whipped egg, using spatula, mix until cooked and mix into the rice mixture.
